Chocolate Chip Pumpkin Bread

Ingredients

  • 2 cups sugar
  • 2 cups canned pumpkin
  • 1/2 cup canola oil
  • 1/2 cup vanilla pudding
  • 2 large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 1/4 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup semisweet chocolate chips
  • cooking spray

Preparation

  1. Preheat oven to 3500.
  2. Combine first five ingredients in a large bowl, stirring well with a whisk.
  3. Lightly spoon flour into dry measuring cups; level with a knife.
  4. Combine flour, cinnamon, salt, and baking soda in a medium bowl, stirring well with a whisk.
  5. Add flour mixture to pumpkin mixture, stirring just until moist.
  6. Stir in chocolate chips.
